Plus, you can keep it fresh in the fridge for a few days and take it to work for lunch!
What You’ll Need:
- 1 dropper full of Medical Mike’s 1200mg CBD Oil
- 2 tablespoons olive oil
- 3 minced garlic cloves
- 1 15oz can of sweet corn, drained
- 1 15oz can black beans, drained
- 1 cup quinoa
- 3 diced Roma tomatoes
- 1 tablespoon chili powder
- 2 teaspoons paprika
- 2 teaspoons cumin
- 1 teaspoon pepper
- 1 teaspoon salt
- 1 cubed avocado
- Lime juice, to taste
- 2 cups vegetable stock
Directions:
- Add olive oil to a large pan and heat over medium.
- Add the garlic and cook for a couple of minutes until softened.
- Add CBD oil to the garlic and oil mixture and stir, making sure it is well incorporated.
- Add the beans, tomatoes, corn, stock, quinoa, cumin, chili powder, paprika, pepper, and salt. Stir and mix well, then cover and let cook for 20 minutes, until the quinoa is soft and all the liquid has absorbed.
- Top each serving with avocado and lime juice, and enjoy!

CBD Cauliflower Risotto
Traditionally, making a good risotto is a bit time-consuming. But when you replace the arborio rice with cauliflower rice, you can whip up this delicious dish in half the time with fewer calories. Plus, you’ll take it to the next level by adding CBD! When it comes to tasty, quick, and easy—you can’t beat this recipe.
What You’ll Need:
For the cauliflower rice:
- 1 head of cauliflower, grated or finely chopped to create 4 cups-worth
For the rest of the dish:
- 2 tablespoons olive oil
- 1 dropper full Medical Mike’s 1200mg CBD Oil
- 2 minced garlic cloves
- ½ cup chopped onions
- 1 cup chopped mushrooms
- 1 cup grated zucchini
- ½ cup green peas
- ½ cup chopped asparagus
- 1 cup vegetable stock
- ½ cup grated parmesan cheese
- 1/3 cup chopped parsley
Directions:
- In a large skillet, heat 1 tablespoon of olive oil on medium-high heat. Cook mushrooms until soft and set aside.
- Reduce the heat to medium and add the other tablespoon of olive oil. Add garlic and onion and sauté until soft.
- Add CBD oil to the garlic, onions, and oil mixture and stir. Make sure it is well incorporated.
- Add in the cauliflower rice. Give it a good stir to coat the rice with the oil and cook for 1-2 minutes.
- Add the asparagus, zucchini, and peas, and bring the temperature up to medium-high.
- Pour in the stock and cook until the cauliflower is tender and the liquid evaporates (about 8 minutes).
- Remove from heat and add the cheese—season with salt and pepper to taste.
- Allow to cool just a bit, and then add the cooked mushrooms.
- Garnish with parsley, and enjoy!
